Recipe: Great Aunt Lucile’s Blonde Brownies

These Blonde Brownies are deliciously addictive and they make the perfect snack during a long day of admin for our wildlife volunteers at Ithala Game Reserve, South Africa.

Ingredients:

2/3 cup butter or margarine1 pound of brown sugar3 eggs2 2/3 cup flour1 ½ teaspoon (tsp) baking powder½ teaspoon (tsp) salt1 cup of chopped nuts6 ounces of chocolate chips

Method:

Melt the 2/3 cup butter in a deep saucepan. Add 1 pound brown sugar and mix well.Let it stand to cool for 10 minutes.Add the 3 eggs, one at a time to the butter and sugar mixture.Then add the following flour mixture: 2 2/3 cup flour, 1 1/2 tsp baking powder and 1/2 tsp salt.Mix well.[caption id="attachment_7466" align="aligncenter" width="850"]

Wildlife volunteer Christine Damico stirring the brownie mixture[/caption]Add the cup of chopped nuts and 6 ounces of chocolate chips to complete the brownie mixture.Pour the brownie mix into a greased and floured 13x9 pan.Bake 30 – 40 minutes at 350ºF / 180ºC
